Filled 'pumpkin' cookies

Ingredients:
COOKIES
1 cupButter
1 cupSugar
1 eachLarge egg
1 tspVanilla
2 tspBaking powder
1 tbspPumpkin pie spice
2 3/4 cupFlour
Orange food color
FILLING
2 cupRaisins
3/4 cupChopped walnuts
1/2 cupFrozen orange juice
-concentrate, thawed
Procedures:
1Prheat oven to 375 degrees in a large bowl, cream butter and sugar with an electric mixer.
2Beat in egg and vanilla.
3Add baking powder, spice, and flour one cup at a time mixing after each addition.
4The dough will be very stiff; blend last flour in by hand.
5Do not chill dough.
6To tint with icing color, add small amounts until desired color is reached.
7Divide dough into 2 balls.
8On a floured surface, roll each ball into a circle approximately 12 inches in diameter.
9Dip wilton "jack-o-lantern cutters" in flour before each use.
10Place half the cookies on cookie sheets.
11Place 1 tablespoon filling on cookie.
12Cut eyes and mouth from remaining cookies.
13Place on top of filling.
14Press to seal edges.
15Bake for 12 to 15 minutes or until lightly browned.
16To make filling just mix all ingredients in a bowl.
17You can also use jelly
