Coconut meringue drops

Ingredients:
3 Egg whites
1 cupSugar
1 tbspVanilla
1 cupCoconut, shredded
Almonds, whole
-unblanched (optional)
Procedures:
1Preheat oven to 300 °F.
2In large bowl use an electric mixer to beat the egg whites until stiff peaks form.
3Gradually beat in sugar.
4Add vanilla.
5With a rubber spatula gently fold in coconut.
6Drop by rounded teaspoonfuls onto greased, floured cookie sheets.
7Press an almond in center of each cookie.
8Bake at 300 °F.
9For 20 to 25 minutes.
10Remove to racks to cool.
11Notes: * holiday cookies -- coconut and almonds give this cookie a distinctive flavor.
12For me the almonds are required.
13* it is a lot of work to beat the egg whites enough without an electric mixer.
14* this cookie must be handled a little more carefully than most as it forms a white shell which causes it to be slightly delicate.

16: time: 20 minutes preparation, 30 minutes baking and cooling.
