| 1 | Makes about 3-4 lbs of candy. |
| 2 | (tip): collect the orange halves over a period of time and refrigerate them in a plastic bag until you have enough to prepare candied peel. |
| 3 | You may candy *whole* orange halves, if you wish. |
| 4 | Just boile them without cutting them into strips. |
| 5 | When cooled, they make lovely containers for candies and nuts, or holiday desserts. |
| 6 | Wash the oranges. |
| 7 | Cut into halves and squeeze out the juice. |
| 8 | Use the juice for some other purpose, of course. |
| 9 | Place the oranges into a large saucepan and cover with cold water. |
| 10 | Place over high heat and heat to a boil. |
| 11 | Add cold water to cover again. |
| 12 | Heat to a boil and drain. |
| 13 | Repeat this process five times in all. |
| 14 | Drain well and scoop out the pulp. |
| 15 | Cut the oranges into ?inch wide strips. |
| 16 | Combine 1 cup of boiling water with 2 cups of the sugar. |
| 17 | Heat until the sugar is dissolved. |
| 18 | Stir in the orange strips. |
| 19 | Place over medium heat and boil for about 30 minutes, until all the liquid is evaporated. |
| 20 | Watch carefully so the peels don"t scorch. |
| 21 | Cool. |
| 22 | Roll the strips in the remaining 2 cups of sugar. |
| 23 | Place on waxed paper to dry. |
| 24 | Package and store in airtight containers |
