| 1 | Fat grams per serving: approx. cook time: 8 hrs combine the spices in a dish. |
| 2 | Cut the meat into strips less than ?of an inch thick. |
| 3 | Remove all fat. |
| 4 | Sprinkle one side with the combined seasonings and beat with a meat hammer. |
| 5 | Turn and repeat the seasoning and beating. |
| 6 | Place the strips on a cookie sheet or other flat pan. |
| 7 | Place in a 120°F oven for 4 hrs. |
| 8 | Turn and put back for another 4 hrs. |
| 9 | Keep the oven door propped open for the entire time to allow the moisture to escape. |
| 10 | With a gas oven, the pilot light may be enough to provide the heat. |
| 11 | Store in a plastic bag. |
| 12 | Also may be stored in a pillowcase. |
