Ingredients:
| 1
| cup | Rice | | 1
| large | Eggplant | | | Salt | | 2
| large | Potatoes | | 14
| oz | Can tomatoes | | 4
| | Garlic cloves, chopped | | 1
| | Onion, chopped | | 1
| pinch | Pepper | | 1
| cup | Olive oil | | 2
| tbsp | Ghee | | 2
| tbsp | Flour | | 2 1/2
| cup | Soy milk | | 1
| pinch | Nutmeg | | 1
| tsp | Allspice |

Procedures:
| 1 | Wash rice & soak for 30 minutes. | | 2 | Slice eggplant into rounds & soak in slightly salted water. | | 3 | Peel & cut potatoes into rounds. | | 4 | Put rice in a pan with the tomatoes, garlic, onion, salt & pepper. | | 5 | Add 2 c water & allow to simmer gently until the water has been absorbed. | | 6 | Dry the eggplants & fry in the olive oil until they just begin to turn golden. | | 7 | Put side. | | 8 | Fry the potatoes in the same way. | | 9 | Make the white sauce. | | 10 | In a pot, heat the ghee. | | 11 | Gradually stir in the flour, then the soy milk. | | 12 | Add a pinch of salt, pepper & nutmeg. | | 13 | Simmer gently for 1 minute. | | 14 | Set aside. | | 15 | Grease a casserole dish. | | 16 | Put in a layer of potatoes, followed by eggplant & finally the rice mixture. | | 17 | Sprinkle the allspice berries on the top. | | 18 | Add the sauce. | | 19 | Bake at 375f for about 30 minutes. |
