Moussaka with rice #3

Ingredients:
1 cupRice
1 largeEggplant
Salt
2 largePotatoes
14 ozCan tomatoes
4 Garlic cloves, chopped
1 Onion, chopped
1 pinchPepper
1 cupOlive oil
2 tbspGhee
2 tbspFlour
2 1/2 cupSoy milk
1 pinchNutmeg
1 tspAllspice
Procedures:
1Wash rice & soak for 30 minutes.
2Slice eggplant into rounds & soak in slightly salted water.
3Peel & cut potatoes into rounds.
4Put rice in a pan with the tomatoes, garlic, onion, salt & pepper.
5Add 2 c water & allow to simmer gently until the water has been absorbed.
6Dry the eggplants & fry in the olive oil until they just begin to turn golden.
7Put side.
8Fry the potatoes in the same way.
9Make the white sauce.
10In a pot, heat the ghee.
11Gradually stir in the flour, then the soy milk.
12Add a pinch of salt, pepper & nutmeg.
13Simmer gently for 1 minute.
14Set aside.
15Grease a casserole dish.
16Put in a layer of potatoes, followed by eggplant & finally the rice mixture.
17Sprinkle the allspice berries on the top.
18Add the sauce.
19Bake at 375f for about 30 minutes.
