Ingredients:
1/4 cupOlive oil
1 Garlic clove, sliced
1/2 lbsFlounder fillets
Cut in ? strips
2 tbspFlat leaf parsley, chopped
2 tbspFresh basil, chopped
1/4 cupWhite wine
4 Plum tomatoes, halved
Seeded, cut in ? slices
Salt to taste
Freshly ground black pepper
To taste
1/2 lbsSpinach spaghetti
Procedures:
1In a large skillet, heat the oil over medium heat.
2Add the garlic; cook 2 minutes or until garlic is lightly golden.
3Add flounder, parsley, and basil.
4Cook for 2 minutes, stirring gently.
5Add wine and tomatoes.
6Simmer 4 minutes to cook the fish and tomatoes.
7Season with salt and pepper to taste.
8Keep warm over low heat.
9Cook spaghetti according to package directions.
10Drain; toss with sauce
