Ingredients:
MEAT SAUCE
2 tbspButter or margarine
1 cupOnion, chopped
1 1/2 lbsGround chuck or lamb
1 Clove garlic, minced
1 tspOregano
1 tspBasil or more
3/4 tspCinnamon
1 tspSalt
1/8 tspPepper, to taste
16 ozTomato sauce
2 tbspDry bread crumbs
EGGPLANT
2 Eggplants, unpeeled
1/2 cupMelted butter or margerine
1/8 tspSalt & pepper
CREAM SAUCE
2 tbspButter or margerine
2 tbspFlour
Procedures:
1Meat sauce melt butter, saute onion, meat & garlic, stirring until brown.
2Add herbs & spices and tomato sauce; bring to a boil.
3Reduce heat, simmer, uncovered, about 30 min. just before assembling casserole, mix bread crumbs into sauce.
4Eggplant - halve eggplants lengthwise.
5Cut each half across into ? slices.
6Place slices in bottom of broiler pan.
7Sprinkle with salt & pepper and brush with butter.
8Broil 4 inches from heat four minute on each side.
9Cream sauce -melt butter & stir in flour, salt & pepper.
10Add millk gradually.
11Bring to a boil, stirring until thick.
12Remove from heat.
13Beat a small amount of cream mixture into eggs.
14Blend egg mixture into remaining sauce.
15Mix well and set aside.
16To assemble - in a 2 qt. shallow baking dish, layer half of the eggplant, overlapping slightly.
17Sprinkle w/2 tb of the combined cheeses.
18Pour meat sauce of eggplant.
19Sprinkle w/2 more tb of cheese.
20Layer remaining eggplant over top.
21Pour cream sauce over all.
22Sprinkle w/remaining cheeses.
