Ingredients:

| | Clove garlic, minced | | 1
| tsp | Oregano | | 1
| tsp | Basil or more | | 3/4
| tsp | Cinnamon | | 1
| tsp | Salt | | 1/8
| tsp | Pepper, to taste | | 16
| oz | Tomato sauce | | 2
| tbsp | Dry bread crumbs | | | EGGPLANT | | 2
| | Eggplants, unpeeled | | 1/2
| cup | Melted butter or margerine | | 1/8
| tsp | Salt & pepper | | | CREAM SAUCE | | 2
| tbsp | Butter or margerine | | 2
| tbsp | Flour |

Procedures:
| 1 | Meat sauce melt butter, saute onion, meat & garlic, stirring until brown. | | 2 | Add herbs & spices and tomato sauce; bring to a boil. | | 3 | Reduce heat, simmer, uncovered, about 30 min. just before assembling casserole, mix bread crumbs into sauce. | | 4 | Eggplant - halve eggplants lengthwise. | | 5 | Cut each half across into ? slices. | | 6 | Place slices in bottom of broiler pan. | | 7 | Sprinkle with salt & pepper and brush with butter. | | 8 | Broil 4 inches from heat four minute on each side. | | 9 | Cream sauce -melt butter & stir in flour, salt & pepper. | | 10 | Add millk gradually. | | 11 | Bring to a boil, stirring until thick. | | 12 | Remove from heat. | | 13 | Beat a small amount of cream mixture into eggs. | | 14 | Blend egg mixture into remaining sauce. | | 15 | Mix well and set aside. | | 16 | To assemble - in a 2 qt. shallow baking dish, layer half of the eggplant, overlapping slightly. | | 17 | Sprinkle w/2 tb of the combined cheeses. | | 18 | Pour meat sauce of eggplant. | | 19 | Sprinkle w/2 more tb of cheese. | | 20 | Layer remaining eggplant over top. | | 21 | Pour cream sauce over all. | | 22 | Sprinkle w/remaining cheeses. |
