Ingredients:
1 lbsGround beef
1 cupChopped onion
Olive oil
1 cupWater
1/2 cupTomato paste
2 tbspMinced parsley
1 Stick butter
Salt & pepper
2 medEggplants
1/2 cupBread crumbs
2 Eggs, well-beaten
1/2 cupGrated cheese
Procedures:
1Brown the meat & onion in some olive oil.
2When well-browned, add water, tomato paste, parsley, butter, & salt & pepper & let it simmer on low for 1 hour or more, until sauce is thickened.
3In the meantime, peel & cut lengthwise the eggplants in ? thick slices.
4Saute in olive oil to a golden brown.
5Add 2 tbs bread crumbs to the meat sauce & mix well.
6Butter a baking dish well & sprinkle with some bread crumbs.
7Place ?of eggplant slices in the dish, & spread ?of the meat sauce on top - repeat.
8Pour eggs on top & spread evenly.
9Sprinkle with cheese & bread crumbs & bake at 350°F for ?hour or until golden.
10Serve with cheese sauce, if you want - i usually don"t
