Mousakas patates (moussaka potatoes)

Ingredients:
3 lbsPotaotes
1 2/3 cupOil
Salt & pepper to taste
1/2 cupOnion, chopped
1 1/2 lbsTomatoes, peeled, strained OR
1 1/2 tbspTomato paste diluted with:
1 cupWater
8 clGarlic
1/2 cupParsley, chopped
1 cupCheese, grated
Bread crumbs
Procedures:
1Clean and peel potatoes; cut into thin round slices.
2Fry in oil, then season with salt & pepper.
3Saute onion to a light golden color in the pan in which you fried the potatoes, and add to them the tomatoes (or paste w/water), garlic, parsley, and salt & pepper; cook abt.
420 min., until you have a thick sauce.
5Remove from heat.
6Add to the sauce ?c. of the cheese and 3 tbs.
7Bread crumbs.
8Oil a med.-size baking ligtly.
9Spread layer of the potatoes in it; cover with part of the sauce.
10Top with another layer of potatoes and sauce.
11Repeat until all is used; sprinkle with remaining cheese and additional bread crumbs; dribble a little oil over the top, and bake in preheated oven at 375°F. for abt. 30 min
