Ingredients:
3 lbsPotatoes
Butter/oil for frying
1 1/2 lbsChopped meat
1 ea Onion, med., chopped
3 tbspButter
1 1/4 lbsTomatoes, peeled, strained OR
1 tbspTomato paste diluted with:
1 cupWater
1 Recipe Bechamel sauce
Salt & pepper to taste
1 tbspParsley, chopped
1 cupParmesan cheese, grated
Bread crumbs, toasted
Procedures:
1Clean and peel potatoes.
2Cut into thin slices and fry in butter.
3Brown chopped meat and onions in 3 tb. of butter, stirring to break up the meat.
4Add tomatoes (or paste w/water), salt, pepper, and parsley.
5Cover, and simmer until all the liquids have been absorbed.
6Remove from the heat.
7Add one-third of the cheese and 3 to 4 tbs.
8Bread crumbs; mix well.
9Butter a baking pan; sprinkle with bread crumbs.
10Spread half the potatoes into the pan and sprinkle with cheese.
11Spread the chopped mat evenly over it.
12Layer the remaining potatoes on top and sprinkle with more cheese.
13Cover with bechamel sauce, sprinkle with the rest of the cheese and then with bread crumbs.
14Drizzle melted butter on top.
15Bake in a preheated 350°F. oven 30 to 40 min., or until golden
