Beef in wine and sour cream sauce

Ingredients:
1 lbsBeef, cut into julienne
1 tbspPaprika
2 tbspButter
1/3 cupOnion, chopped
1/2 cupDry white wine
1 cupSour cream
1/2 cupSour pickles, cut thin
Procedures:
1Sprinkle the meat with paprika and rub in well.
2Heat the butter in a very hot skillet and add the meat, stirring to separate the pieces so that they cook evenly.
3Cook 2-3 min. remove the meat with a slotted spoon.
4Add the onion to the skillet and cook, stirring about 1 min. add the wine and cook down to reduce by about one half.
5Lower the heat and add the sour cream, stirring.
6Do not allow the sauce to boil or the sour cream will curdle.
7Return the meat to the skillet and stir to blend.
8Add the sour pickles and mix in well.
9Serve with rice, noodles or sauteed potatoes.
10If desired, garnish with pickle fans.
