Macaronia me voutyro - pasta with brown butter sauce

Ingredients:
1 lbsSpaghetti or other pasta
1/2 lbsButter
1/2 cupKefalotyri or Parmesan
-(Grated)
Procedures:
1Fill a large deep pot ?full with water.
2Add salt and bring to a rolling boil.
3Add pasta slowly, without breaking the boil.
4Cook 10 minutes.
5Place a colander in sink and turn pasta into it.
6Rinse under hot running water, allowing the water to drain through the spaghetti.
7Heat the butter in a small saucepan to a honey brown.
8Watch it carefully for these minutes; it burns quickly and suddenly.
9Return spaghetti to large pot and dribble hot butter over it.
10Sprinkle with half the cheese and toss gently to mix.
11Transfer to a large ovenproof platter, sprinkle top with more cheese and bake for 10 minutes at 350°F.
12Serve hot.
