Ingredients:
TO BRAISE
1 largeFresh, Beef Heart
1 tbspVegetable oil
1 tspSalt
1 tspPepper
1/2 cupWater
TO COOK IN LIQUID
1 largeFresh, Beef Heart
1 tspSalt, per quart of water
Water, sufficient to cover
-heart in kettle
Procedures:
1To braise: cook whole heart on all sides after first rubbing with oil, salt and pepper, until just brown.
2Add ?cup water.
3Heat to boiling; reduce heat immediately.
4Cover and simmer on top of range, or in 300 degree oven until tender, about 3 to 4 hours.
5To cook in liquid: cover heart with water; add salt to water and heat to boiling; skim surface and reduce heat to simmer.
6Cover and simmer until tender about 3 to 4 hours.
7Serve with small bowls of cider vinegar or horseradish for dipping
