Greek-style pasta with leeks

Ingredients:
12 ozSpinach pasta, any shape
6 ea Garlic cloves, minced
2 largeLeeks, cleaned, trimmed &
-- thinly sliced
2 tspFennel seed
1 tbspOlive oil
28 ozCan tomatoes, crushed
1/2 cupKalamata olives
1 tspOregano
Salt & pepper, to taste
Procedures:
1Cook pasta according to package directions (or use fresh pasta).
2Drain & set aside.
3Saute garlic, leeks & fennel seeds in oil in a large skillet until the leeks are soft, about 20 minutes.
4If the mixture begins to stick, add a little water.
5Stir in the tomatoes, olives, oregano, & salt.
6Simmer uncovered until the sauce is reduced, about 20 minutes.
7Remove from heat, add black pepper, combine with the pasta & serve.
