Greek mushroom salad

Ingredients:
8 ozSmall button mushrooms
5 tbspDry white wine
5 tbspWater
5 tbspOlive oil
Juice of half a lemon
1 eachBay leaf
1 tbspChopped onion
1 pinchThyme
1 pinchCoriander
1 pinchFennel seeds
Salt & pepper
Procedures:
1Wipe the mushrooms, but do not peel them.
2Put all the remaining ingredients into a saucepan & simmer them for 5 minutes.
3If the mushrooms are very small, leave them whole.
4Otherwise, cut them in half or into quarters, depending upon their size.
5Add to the saucepan & simmer for 5 minutes.
6Let them cool in the liquid before placing in a bowl to serve.
