Greek honey cream with fruits and nuts

Ingredients:
1/4 cupCoarsely chopped walnuts
1/4 cupCoarsely chopped almonds*
1/4 cupCoarsely chopped cashews
1/4 cupCoarsely chopped pistachios
1 cupHoney
1 cupChilled whipping cream
Mixed fresh fruit*
Procedures:
1*note: almonds should be blanched.
2** suggested fruits: berries, sliced pears and apples.
3Preheat oven to 325°F.
4Place all nuts in baking pan.
5Bake until lightly toasted, stirring occasionally, about 15 minutes.
6Cool completely.
7Using electric mixer, beat honey in large bowl until thick and pale, about 2 minutes.
8Whip cream in another large bowl until stiff peaks form.
9Fold nuts into cream.
10Gently fold cream into honey, leaving a few steaks of cream.
11Cover and refrigerate until well chilled and slightly set, about 2 hours.
12(can be prepared 1 day ahead).
13Place dollop of honey cream on each plate.
14Surround with fruit and serve.
