Ingredients:

1 lbsChuck roast, cut into
-?inch pieces
2 tbspOlive oil, divided
1 largeOnion, chopped
4 Cloves garlic, minced
1 tbspCurry powder
1/2 tspGround cumin
1/2 tspGround cinnamon
1 cupCanned crushed tomatoes
2 cupCanned or homemade beef
-broth
2 Sweet potatoes, peeled
-diced
2 Carrots, cut in thin rounds
4 tbspRaisins
Salt and pepper, to taste
1 cupOrzo pasta, cooked according
-to package directions
Procedures:
1In a large stockpot, brown meat in 1 tablespoon oil.
2Remove from pan.
3Saute onion and garlic in remaining 1 tablespoon oil 3 minutes over medium heat.
4Stir in curry, cumin and cinnamon.
5Add tomatoes, beef broth, sweet potatoes, carrots, raisins, salt and pepper.
6Simmer 1 hour.
7Serve over orzo.
8Makes 4 servings
