Ingredients:
2 lbsLean stewing beef
2 Sl Bacon, diced
2 Doz tiny boiling onions
1 tbspRed wine vinegar
1 tbspBrown sugar
1 1/2 cupDry red wine
Salt and pepper to taste
2 Buds garlic, minced
1 tspFresh thyme OR
1/2 tspDried thyme
1 tspBeef stock base
2 Strips orange peel
2 tbspCornstarch
2 tbspParsley, chopped
Procedures:
1Cut meat in 1-inch cubes.
2Fry bacon until crisp.
3Remove from pan.
4Pour off all but 2 tablespoons drippings.
5Brown meat and onions in drippings.
6Transfer to crockery pot along with bacon.
7Add vinegar and brown sugar to pan drippings.
8Cook 1 minute, stirring.
9Pour in wine.
10Bring to a boil.
11Pour over meat.
12Season with salt, pepper, garlic, thyme, stock base and orange peel.
13Cover.
14Cook on low 8 hours.
15Turn to high.
16Mix cornstarch with 1 tablespoon cold water.
17When pan juices are bubbling, stir in cornstarch paste.
18Cook, stirring until thickened.
19Garnish with parsley. makes 6 servings
