Ingredients:
| 2
| lbs | Lean stewing beef | | 2
| | Sl Bacon, diced | | 2
| | Doz tiny boiling onions | | 1
| tbsp | Red wine vinegar | | 1
| tbsp | Brown sugar | | 1 1/2
| cup | Dry red wine | | | Salt and pepper to taste | | 2
| | Buds garlic, minced | | 1
| tsp | Fresh thyme OR | | 1/2
| tsp | Dried thyme | | 1
| tsp | Beef stock base | | 2
| | Strips orange peel | | 2
| tbsp | Cornstarch | | 2
| tbsp | Parsley, chopped |

Procedures:
| 1 | Cut meat in 1-inch cubes. | | 2 | Fry bacon until crisp. | | 3 | Remove from pan. | | 4 | Pour off all but 2 tablespoons drippings. | | 5 | Brown meat and onions in drippings. | | 6 | Transfer to crockery pot along with bacon. | | 7 | Add vinegar and brown sugar to pan drippings. | | 8 | Cook 1 minute, stirring. | | 9 | Pour in wine. | | 10 | Bring to a boil. | | 11 | Pour over meat. | | 12 | Season with salt, pepper, garlic, thyme, stock base and orange peel. | | 13 | Cover. | | 14 | Cook on low 8 hours. | | 15 | Turn to high. | | 16 | Mix cornstarch with 1 tablespoon cold water. | | 17 | When pan juices are bubbling, stir in cornstarch paste. | | 18 | Cook, stirring until thickened. | | 19 | Garnish with parsley. makes 6 servings |
