Ingredients:
1 lbsSIRLOIN, SLIGHTLY FROZEN
1 eachLARGE ONION, CUT IN WEDGES
1 eachSMALL RED PEPPER, IN STRIPS
1 eachMED ZUCCHINI, SLICED, ?
1/2 tspDRIED TARRAGON LEAF, CRUSHED
6 ozWHOLE MUSHROOMS, DRAINED
1/2 cupBEEF BROTH
2 tbspDIJON MUSTARD
1 cupSOUR CREAM
1 xHOT COOKED SPAGHETTI SQUASH
Procedures:
1Cut steak in thin strips, across the grain.
2In a 12 inch skillet, heat 2 tablespoons oil over high heat.
3Add the steak; saute for 1 minute.
4With slotted spoon, remove the steak strips and set aside.
5To the drippings in the skillet, add onion and pepper; over medium heat saute 3 minutes.
6Add the zucchini; saute 1 minute.
7Increase heat to medium high, add tarragon and mustard to skillet.
8Stir until blended.
9Reduce heat to low; stir in sour cream.
10Heat through 1 minute.
11Do not simmer
