Ingredients:
2 lbsEel (boned, skinned)
1/4 cupOlive oil
4 Onions, thinly sliced
1 Garlic clove, pressed
2 cupTomatoes
1/2 cupParsley, chopped
1 tspOregano
1/8 tspCinnamon
1 tspSalt
Pepper to taste
1/2 cupRed wine, (Mavrodaphne, Port)
Procedures:
1Rinse eel with cold water.
2Oil baking pan with half of the oil.
3Place slices of eel on pan.
4Sauce: heat remaining oil in frying pan, and fry onions and garlic on medium heat for 5 minutes.
5Add remaining ingredients and cover.
6Cook 10 minutes.
7Pour sauce over eel.
8Bake 45 minutes at 375 degrees.
9Serve with crusty bread and a crisp salad
