Lentils and rice pilaf

Ingredients:
MIAMI HERALD
2 cupLow-salt vegetable stock
1 cupWater
1/2 cupLong grain white rice
1/2 cupLentils
1 medOnion -- sliced
2 medTomatoes -- diced
1 tspDried thyme
Salt and pepper to taste
Procedures:
1Combine the stock and water.
2Brings 2 cups liquid to a boil.
3Rinse lentils and slowly ass to boiling stock so that liquid continues to boil.
4Cover and cook 5 minutes.
5Rinse riceand add to lentils with onion, tomatoes, thyme amd remaining 1 cup liquid.
6Cover and simmer 20 minutes.
7Salt and pepper to taste.
