Ingredients:
1 medOnion, chopped finely
1 Clove garlic, minced
2 tbspOlive or salad oil
1 lbsGround chuck
1 canSliced mushrooms
2 tspSalt
1 tspOregano
3/4 cupWater
1 can(8-oz) tomato paste 8-oz
2 Eggs
1 pack(10-oz) frozen chopped
-spinach, thawed
1 cupCreamy cottage cheese
1/2 cupGrated Parmesan cheese
1 pack(12-oz) lasagna noodles
1 packAmerican cheese slices
Procedures:
1Cook & drain lasagna noodles.
2In medium pan lightly brown onion & garlic in 1 tbs oil.
3Add meat & break apart.
4Cook until brown.
5Blend in mushrooms (including liquid), tomato paste, 1 tsp salt, oregano & water.
6Simmer 15 minutes.
7Mix one of the eggs with spinach, cottage cheese, parmesan cheese, 1 tbs oil & 1 tsp salt.
8Beat second egg slightly & toss with cooked noodles.
9Pour half the meat sauce in an oblong baking dish & cover with half the noodles.
10Spread all the spinach mixture over noodles.
11Repeat layers with remaining meat sauce & noodles.
12Cover & bake at 350°F for 45 minutes.
13Remove cover & arrange strips of slices of american cheese on top.
14Bake 15 minutes longer.
15Serve hot.
