Ingredients:
1 lbsCube steaks, lean
2 tspVegetable oil
4 1/2 tspSpicy Seasoning Mix

1 medOnion, chopped
28 ozPlum tomatoes, canned
- undrained
2 cupWhole kernel corn, frozen
Procedures:
1Preparation time: 30 minutes heat oil in deep large skillet over medium heat 5 minutes.
2Meanwhile cut each steak lengthwise into 1" wide strips, then cut crosswise in 1" pieces.
3Sprinkle meat with 2 ts.
4Spicy seasoning.
5Stir-fry meat and onion 2 to 3 minutes.
6Season with salt if desired.
7Add tomatoes (break up with back of spoon), corn and remaining 2 ?teaspoons of the seasoning mix.
8Bring to a boil; reduce heat to medium low and simmer, uncovered, 18 to 20 minutes.
9Serving suggestions: tortilla chips and melon wedges.
