Ingredients:
4 ozGround beef, lean
4 Green onions, sliced
1 clGarlic, minced
1/2 cupSalsa
1/2 cupLow-fat cottage cheese
1 tspCornstarch
1/4 tspDried oregano. crushed
2 Flour tortillas, 6 inch
1/4 cupMozzarella cheese, shredded
Procedures:
1Cook ground beef, onions, and garlic in a small saucepan till beef is no longer pink and onion is tender.
2Drain off fat.
3Combine 2t of the salsa, the cottage cheese, cornstarch, and oregano.
4Add to meat mixture in saucepan.
5Cook and stir till thickened and bubbly.
6Cook and stir for 2 minutes more.
7Divide meat mixture between tortillas; roll up.
8Cover and keep warm.
9In the same saucepan, heat remaining salsa.
10Pour over burritos.
11Top with cheese.
