| tsp | CRACKED BLACK PEPPERCORNS | | 1
| tsp | RED PEPPER FLAKES | | 1
| tsp | CORIANDER SEEDS | | 1
| tsp | CARDOMOM GRAINS | | 1
| tsp | FENUGREEK SEEDS - OPTIONAL | | 1/8
| tsp | CINNAMON | | 1/8
| tsp | GROUND CLOVES | | 1/8
| tsp | GROUND ALLSPICE | | 1
| tbsp | SALT OR TO TASTE | | 1/3
| cup | PAPRIKA | | 1/2
| cup | OLIVE OIL | | 1
| each | JUICE OF ONE LEMON |

Procedures:
| 1 | Finely chop the onion. | | 2 | Mince garlic and ginger. | | 3 | Place onions, garlic, ginger, peppercorns, red pepper flakes, coriander, cardomom, fenugreek, cinnamom, cloves, allspice, salt and paprika in a dry skillet. | | 4 | Cook over medium heat for 3 to 4 minutes, or until spices are lightly toasted and fragrant. | | 5 | Combine roasted spices, olive oil and lemon juice in blender and puree until smooth. | | 6 | Spread paste on meat and marinate overnight. | | 7 | Warning!! a little of this spicy mix goes a long way. | | 8 | Makes enough marinade for about 2 lbs. | | 9 | Of meat. | | 10 | (pork, sirloin steak, tuna). | | 11 | Note:: fenugreek is a rectangular seed found in indian or middle eastern grocery stores |
