Ingredients:
2 cupBeef, Cooked, Shredded
1 cupRefried Beans, Below
8 Flour Tortillas, *
2 cupLettuce, Shredded
2 cupTomatoes, Chopped, 2 Medium
1 cupCheddar Cheese, Shredded
REFRIED BEANS
1/2 cupLard Or Vegetable Oil
2 cupPinto Beans, Cooked
2 tbspChile Powder
1 tbspCumin, Ground
1 tspSalt
1/8 tspPepper
Procedures:
1* tortillas should be 10-inches in diameter and warmed.
2~--------------------------------------------------------------------- ~-- heat beef and refried beans separately.
3Place about ?cup of the beef on the center of each tortilla.
4Spoon about 2 t of the beans onto the beef.
5Top with ?cup of the lettuce and about 2 t each of tomatoes and cheese.
6Fold one end of the tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping.
7Fold down remaining end, and serve.
8Refried beans: heat lard in 10-inch skillet over medium heat until hot.
9Add pinto beans; cook for 5 minutes, stirring occasionally.
10Mash beans; stir in remaining ingredients.
11Add oil to skillet if necessary; cook and stir until smooth paste forms, about 5 minutes.
12Garnish with shredded cheese, if desired
