Ingredients:
YIELD: 6 SERVINGS
2 lbsBeef sirloin, cut into
- serving pieces
2 ea Tb Lemon juice
1/2 tspBlack peppercorns, cracked
3 ea Garlic cloves, minced
1/2 tspSalt or to taste
2 ea Tb Olive oil
1 medOnion, chopped
1 medTomato, chopped
1 ea Tb Tomato paste
2 cupWater
1 ea Bay leaf
1/2 cupGreen olives, drained
1/2 cupSweet red pepper, sliced
1 ea - 2 chili pepper, optional
Marinate beef in a mixture
-of lemon juice
Procedures:
1Peppercorns, salt and garlic for 2 hours in the refrigerator.
2In a deep non-stick pan over medium high heat, fry beef pieces in 1 tablespoon olive oil until browned.
3Set aside.
4In the same pan over medium heat, saute onion in 1 tbsp. olive oil for 1 minute.
5Add beef pieces, tomato, tomato paste, water, sugar, bay leaf and a little salt.
6Cover pan, bring to a boil, then simmer over medium low heat for 1 hour or more until meat is tender.
7Stir occasionally.
8Add a little water if more sauce is preferred.
9Add green olives.
10Correct seasoning to taste.
11Turn of heat.
12Add sweet red pepper slices last and cover for 1-2 minutes.
13Serve warm with steamed rice.
14Tip: you may use a dash of hot dried chili peppers in place of the fresh chili.
15Add more if you wan an extra hot dish. serves 4-6
