Ingredients:
1 1/2 lbsGround round steak, ground
-twice
1/2 cupSoft bread crumbs
3 Tbspminced scallions
2 Tbspminced parsley
1/8 Tspfresh ground pepper
1 TbspWorcestershire sauce
1/4 cupBeef bouillon
6 Tbspbutter
1 tspSeasoned salt
6 Mushroom caps, for serving
SAUCE:
1/4 cupButter
1/4 cupMinced parsley
1 Clove garlic, minced
1/2 tspLemon juice
1/4 tspCrushed rosemary
1/8 tspSalt
2 tbspKetchup
1/4 cupRed wine
1/2 cupBeef bouillon
6 Toast points for serving
Procedures:
1Source: mainbeef.zip filets: garnish: onion ruffles, carrot curls, parsley combine all filet ingredients except butter and seasoned salt.
2Shape into six patties 1 ?inches thick.
3Press 1 teaspoon of the butter into center of each enclosing well.
4Wrap a strip of foil, 1 ?inches wide, around, folding over ends to secure.
5Sprinkle both sides with seasoned salt.
6Chill while preparing mushrooms and sauce.
7Melt 1 tablespoon of butter in medium fry pan.
8Saute mushroom caps.
9Set aside.
10Wipe out pan for sauce.
11Make sauce by combining all ingredients and simmer 10 minutes, until slightly thickened.
12Keep warm.
13Heat remaining butter about 4 tablespoons in large heavy fry pan.
14Cook filets 3 to 3 ?minutes on each side, slightly pink in center.
15Remove foil strips.
16Place on toast points on serving plate.
17Spoon on sauce and top with mushroom caps.
18Garnish. serves 6
