Ingredients:
2 3/4 lbsBeef roast
1/4 tspSalt
1/4 tspMarjoram
1/4 tspThyme
1/4 tspBlack pepper
1 3/4 cupBeef consomme
1 3/4 cupHot water
3/4 ozFlour
1/4 cupCold water
1/4 cupRed Wine
5 ozMushrooms, halved
11 ozPearl Onions
Procedures:
1Brown meat.
2Remove from heat.
3Sprinkle with salt, marjoram, thyme, and pepper.
4Mix consomme with hot water.
5Pour just enough consomme over meat to cover and simmer 1 hr, adding consomme as needed to keep meat covered.
6Mix flour with cold water and add to meat to thicken sauce.
7Add half of wine and simmer for ?hr.
8Add rest of wine and simmer until meat is tender.
9Gently stir in mushrooms and onions 10 minutes before removing from heat.
10Serve over rice or noodles
