Fortune cookies

Ingredients:
3 Egg whites
1/2 cupSugar
1/8 tspSalt
1/4 tspVanilla
1 cupAll-purpose flour
1 tspInstant tea
2 tbspWater
1/2 cupMargarine, melted
Fortunes on slips of paper
Procedures:
1Mix egg whites, sugar and salt thoroughly with spoon.
2Mix in remaining ingredients, except fortunes.
3Cover bowl with plastic wrap and chill for 30 minutes.
4Preheat oven to 350°F.
5Grease baking sheet.
6Have clean white cotton gloves ready to use when folding and shaping the hot cookies.
7If gloves are not available, use two pieces of paper towelling folded to several thicknesses to protect fingers from the hot cookies.
8Also have some clean muffin tins ready to hold baked cookies while they cool.
9Shape and bake 2 cookies at a time.
10For each cookie, drop 1 teaspoon batter onto a baking sheet.
11Spread the batter with back of spoon to make a 3-inch circle.
12Bake at 350f for 3 to 5 minutes, or until edges turn light brown.
13Work very quickly.
14Remove one cookie with wide spatula to counter top.
15Place a fortune paper across center of cookie.
16Using gloves or paper towelling, fold edge of cookie over to make a semicircle.
17Hold cookie on the ends and place the middle of folded edge over top of muffin pan; bend ends down.
18Place folded cookie carefully in a muffin cup to cool.
19Repeat process.
20Makes 36 cookies.
