Ingredients:
1/2 cupButter or margarine
1/2 cupBrown sugar, lightly packed
1 tspAlmond extract
1 Egg
1/2 cupRice flour
2 cupCrispy Rice (crushed)
2 tbspChopped almonds
Procedures:
1This is a special recipe made without gluten.
2Crispy rice is available from a food distributor or health food shop.
3Preheat oven to 350°F.
4Cream butter and sugar together until light and fluffy.
5Add almond extract and egg.
6Beat well.
7Stir in flour, crispy rice and almonds.
8Shape into balls, 1" in diameter and place on ungreased baking sheet.
9Press with a floured fork to flatten slightly.
10Bake for 12 to 15 minutes until lightly browned.
