| 1 | PLACE potatoes in large saucepan. |
| 2 | Cover with water; bring to a boil. |
| 3 | Cook over medium-high heat for 15 to 20 minutes or until tender; drain. |
| 4 | RETURN potatoes to saucepan; add evaporated milk and butter. |
| 5 | Beat with hand-held mixer until smooth. |
| 6 | Stir in cheese. |
| 7 | Season with salt and pepper. |
| 8 | NOTE: Chopped green onions, chopped parsley or cooked, crumbled bacon may be added to mashed potatoes. |
