Ingredients:
| 3
| large | apples | | 1
| cup | confectioner's sugar (powdered) | | 2
| tbsp | lemon juice | | 1/2
| cup | water | | 1/2
| tsp | vanilla extract | | 2
| med | eggs | | 2/3
| cup | cornstarch | | 1
| cup | fresh cream |

Procedures:
| 1 | Wash, peel and core the apples. Cut them into quarters. | | 2 | In a small pot, bring water to a boil. Add apples, lemon juice, and vanilla extract, then cover and let them cook over low heat for 25 minutes, stirring occassionally. Use a fork to roughly crush the apples. | | 3 | In a small bowl, mix together eggs, sugar, cornstarch and cream. Add the crushed, cooked apples to the mixture. | | 4 | Transfer to a larger pot, then cook over low heat, stirring constantly. Cook for about 5-7 minutes, until the mixture is thick. | | 5 | Pour the cream in a jelly mold. Let cool for about 1 hour, then refrigerate for about 3 hours, until set. | | 6 | To serve, loosen the sides with a knife, then turn the mold upside down on a serving plate. Shake it a little until the pudding sets on the plate. | | 7 | Garnish with whipped cream and fruits. |
