2 tbsplemon juice
1/2 cupwater
1/2 tspvanilla extract
2 medeggs
2/3 cupcornstarch
1 cupfresh cream
Procedures:
1Wash, peel and core the apples. Cut them into quarters.
2In a small pot, bring water to a boil. Add apples, lemon juice, and vanilla extract, then cover and let them cook over low heat for 25 minutes, stirring occassionally. Use a fork to roughly crush the apples.
3In a small bowl, mix together eggs, sugar, cornstarch and cream. Add the crushed, cooked apples to the mixture.
4Transfer to a larger pot, then cook over low heat, stirring constantly. Cook for about 5-7 minutes, until the mixture is thick.
5Pour the cream in a jelly mold. Let cool for about 1 hour, then refrigerate for about 3 hours, until set.
6To serve, loosen the sides with a knife, then turn the mold upside down on a serving plate. Shake it a little until the pudding sets on the plate.
7Garnish with whipped cream and fruits.
