Ingredients:

| large | veal cutlets, abt 1/3 lb each | | 2
| large | eggplants | | 1/4
| lbs | butter | | 1
| tbsp | chopped garlic | | 2
| tbsp | lemon juice | | x | salt and pepper | | 1
| tsp | thyme | | x | aluminum foil |

Procedures:
| 1 | Cut aluminum foil to make a rectangle for each veal cutlet. | | 2 | In a small sauce pan, melt butter over medium heat. Add chopped garlic and saute for about 1-2 minutes. Add lemon juice, thyme, salt and pepper (to taste). | | 3 | Spread garlic-butter mixture on both sides of the veal cutlet. Place each cutlet on the aluminum foil, then roll up to close on the sides. One side of the veal will not be covered. | | 4 | Cook over a hot charcoal grill. Grill each side for about 10-12 minutes. | | 5 | Slice eggplants lenghtwise, then grill with the veal cutlets. Baste eggplants with the garlic-butter mixture. | | 6 | Serve the wrapped veal cutlets with grilled eggplant and sauteed potatoes. |
