Panfried Fish Cutlets with Leeks

Ingredients:
4 xfish fillets (1/3 lb each)
2 tbspflour
xsalt and pepper
2 largeleeks
2 tbspbutter
1 tspsugar
Procedures:
1Clean and peel the leeks. Separate the white part from the green. Cut the white part of the leeks into 1/2 inch slices.
2Cut the green part of the leeks into julienne strips. Blanch in boiling water, then set aside for garnish.
3In a small saucepan, melt the butter over medium heat. Add sugar and sliced leeks, then saute for about 2 minutes.
4Cut fish fillets to make 1-inch slices. Season with salt and pepper. Coat with flour, then panfry for 3 - 5 minutes, until cooked.
5Arrange fish cutlets and buttered leeks on serving plates. Serve with buttered flat noodles and Hollandaise sauce on the side.
6Garnish with leeks julienne.
