Indian Club Sandwich

Ingredients:
4 largered snapper fillets
12 slicetoasted white bread
2 largetomatoes
1 largelettuce (butterhead)
2 smalleggs, beaten
2 tspcurry powder
3 tbspflour
2 tbspbread crumbs
salt and pepper
Procedures:
1Cut snapper fillets in two. Season with salt, pepper, and curry powder.
2Coat fillets with flour and dip in egg. Coat well with bread crumbs and panfry fish fillets until cooked.
3Wash and cut tomatoes into 1/3 inch slices.
4Make double-decker sandwiches by alternating fish, tomato and bread slices.
5Serve on a bed of lettuce.
6*You can serve with chutney on the side.
7** Other types of fish can be used like sea bass, trout, salmon, etc.
