Golden Pineapple Fritters

Ingredients:
1 largecanned sliced pineapples (about 12 pcs)
1 1/4 cupall purpose flour
1 xegg, separated
2/3 cupmilk
2 tbspbutter, melted
1 cupwhite rum
1 tspbaking powder
1 tsppowdered (icing) sugar
xcooking oil for deep-frying
Procedures:
1Open the canned pineapple sliceds, then pour out the juice. Pour in 2/3 of the rum and marinate for about an hour.
2In a bowl, mix butter with milk and baking powder.
3Add the egg yolk, powdered sugar, flour, and 1/3 of the white rum. Mix well and let stand for about 1 hour.
4Beat the egg white until stiff. Fold into the batter.
5Dip pineapple slices in the batter until well coated. Deep fry in hot oil for about 3-5 minutes, until golden brown.
6Drain on paper towels, then serve hot.
