Ratatouille a la Nicoise

Ingredients:
2 largeonions, peeled and minced
1 largeeggplant
2 largezucchinis
4 largetomatoes
2 xgreen bell pepper
2 tspchopped garlic
1/2 cupolive oil
xsalt and pepper to taste
Procedures:
1Wash all vegetables well.
2Cut eggplant into large slices and slice tomatoes into quarters.
3Cut zucchinis into ?inch slices, the peppers into ?inch strips.
4In a large pan, heat olive oil. Saute chopped onions for 1-2 minutes.
5Add all the sliced vegetables and garlic. Season with salt and pepper and stir-fry for about 5 minutes.
6Cover and let it cook over low heat for about 45 minutes to an hour. (stirring occasionally)
7Serve hot off the pan.
