Ingredients:

| lbs | beef for braising, cut into big cubes | | 2
| lbs | leeks | | x | salt and pepper | | 1/2
| cup | white wine | | 2
| tsp | tomato paste | | 1/2
| x | onion, peeled | | x | bay leaf and clove | | 1/2
| cup | water |

Procedures:
| 1 | Peel and trim the leeks. Cut lengthwise into quarters. Wash well, then cut crosswise into 1 inch sections. | | 2 | Place beef, leeks, wine, water, tomato paste and onion in the pressure cooker. Season with salt and pepper. Add a bay leaf and clove. | | 3 | Heat until simmering, then pressure-cook at low for about 50 minutes to one hour. | | 4 | Transfer contents to a serving dish, arranging the pieces of beef on top. |
