French Roast Pork with Prunes

Ingredients:
1 1/2 lbspork loin (for roasting)
1/2 lbsprunes, dried/ seedless
xsalt, pepper, cooking oil
1/2 cupwhite wine
Procedures:
1Ask your local butcher to make an incision in the center of the pork loin for stuffing.
2Preheat oven to 400 F.
3Stuff the center of the pork with half of the prunes. Season pork with salt and pepper, then rub with oil.
4Transfer pork to a baking dish, then roast in the oven for 60 - 90 minutes, until meat is well cooked.
5In a small sauce pan, heat wine until simmering, then add the rest of the prunes. Simmer for about 5-10 minutes, then remove from heat. Drain.
6When cooked, arrange pork in serving dish. Transfer the drippings / juice to a sauce cup. Surround with the marinated prunes. Serve with the roast drippings on the side.
