Grilled Cornish Game Hen with Diablo Sauce

Ingredients:
2 xcornish game hen, cut into halves
xsalt, pepper, and mustard
xcooking oil
DIABLO SAUCE
1 largeonion, peeled and chopped
2 shallots, peeled and chopped
2 tbspwhite wine vinegar
2 tbspbutter
1 tbspflour
2 cupschicken stock
2 tsptomato paste
2 tspchili powder (adjust acc to taste)
1 tbspmustard
1 tbspchopped tarragon
xsalt and cayenne pepper
Procedures:
1Rub the halved cornish game hen with mustard. Season with salt and pepper.
2Brush with cooking oil and cook over a charcoal grill until well cooked on both sides. Brush occassionally with oil.
3Serve with Diablo Sauce.
4SAUCE: In a sauce pan, mix vinegar together with chopped onions and shallots. Simmer over high heat until vinegar is almost completely reduced.
5Add butter and flour. Mix well, then add chicken stock, tomato paste, chili powder and season with salt and pepper.
6Boil for 10 minutes, stirring occassionally.
7Just before serving, add mustard and chopped tarragon.
