Ingredients:
| 2
| x | cornish game hen, cut into halves | | x | salt, pepper, and mustard | | x | cooking oil | | | DIABLO SAUCE | | 1
| large | onion, peeled and chopped | | 2
| | shallots, peeled and chopped | | 2
| tbsp | white wine vinegar | | 2
| tbsp | butter | | 1
| tbsp | flour | | 2
| cups | chicken stock | | 2
| tsp | tomato paste | | 2
| tsp | chili powder (adjust acc to taste) | | 1
| tbsp | mustard | | 1
| tbsp | chopped tarragon | | x | salt and cayenne pepper |

Procedures:
| 1 | Rub the halved cornish game hen with mustard. Season with salt and pepper. | | 2 | Brush with cooking oil and cook over a charcoal grill until well cooked on both sides. Brush occassionally with oil. | | 3 | Serve with Diablo Sauce. | | 4 | SAUCE: In a sauce pan, mix vinegar together with chopped onions and shallots. Simmer over high heat until vinegar is almost completely reduced. | | 5 | Add butter and flour. Mix well, then add chicken stock, tomato paste, chili powder and season with salt and pepper. | | 6 | Boil for 10 minutes, stirring occassionally. | | 7 | Just before serving, add mustard and chopped tarragon. |
