Sauteed Potatoes Lyonnaise

Ingredients:
1 1/2 lbspotatoes
1 xlarge onion, peeled
1 xlarge sausage
3 tbspbutter
xsalt and pepper
Procedures:
1Wash potatoes (with skin on) very well.
2Put them in a pot with cold, salted water and bring to boil. Cook them until tender, then drain and allow to cool.
3Peel potatoes and cut into 1/4 inch slices.
4Slice onions to make thin rings. Cut sausage into 1/4 inch slices.
5Heat frying pan and add half of the butter
6Saute sliced onions until golden, take them out and keep hot.
7Saute sausage slices in the other half of the butter, then add potatoes. Pan-fry until cooked.
8Add sauteed onions, then season with salt and pepper.
9Garnish with parsley if desired.
