Ingredients:
4 xpork chops
2 largeoranges
4 tbspbutter
1 tspchopped parsley
1 tsporange zest
salt and pepper
Procedures:
1Orange-Butter Sauce: Leave butter under room temperature for about an hour to soften. Mix in the orange zest and chopped parsley. Season with salt and pepper to taste and set aside.
2Wash the oranges. Grate the peel to make fresh orange zest, and squeeze out the juice.
3Marinate the pork chops in orange juice with its zest (grated peel) for about one hour.
4Season pork chops with salt and pepper, and rub both sides with a little of the orange-butter mixture. Cook over a charcoal gril for about 8-10 minutes on each side, until cooked.
5Arrange pork chops on serving plates. Garnish with a slice of orange on top, and serve with orange-butter on the side.
