Orange Mousse

Ingredients:
1 cuporange juice
3 eacheggs, pasteurized
1/5 cupflour
3/4 cuppowdered (confectioner's) sugar
2 tbspgrated orange zest
Procedures:
1Separate the egg yolks from the whites.
2In a small saucepan, mix together the flour, egg yolks, 1/4 of the sugar, orange zest, and the orange juice. Bring slowly to a boil over medium heat, stirring constantly. Remove from heat and let it cool for an hour. Stir from time to time.
3In a large bowl, use an electric mixer to beat the egg whites with the rest of the sugar until stiff and white. Fold in the orange mixture and mix gently until smooth.
4Transfer to serving cups or red wine glasses and chill in the refrigerator for 3 hours before serving.
