Ingredients:
| 4
| large | slices of cooked ham | | 3/4
| lbs | frozen spinach - thawed | | 1
| can | button mushrooms, drained | | 2
| tbsp | butter | | 1
| cup | cream | | 4
| tbsp | white wine or port wine | | 2
| x | egg yolks | | x | salt, pepper and ground nutmeg | | 1/4
| cup | cottage cheese | | 2
| x | garlic cloves, chopped | | 2
| tbsp | cooking oil | | 1/2
| tsp | cornstarch |

Procedures:
| 1 | Thaw the spinach in room temperature - you may use the microwave oven. | | 2 | Heat cooking oil in a frying pan over high heat. Saute the chopped garlic, then add the spinach. Saute for about 3 minutes, then transfer to a baking dish. | | 3 | For the sauce, put the cream, 3/4 of the white wine and cornstarch in a small sauce pan. Mix and bring to a boil. Season with salt, pepper and nutmeg. Let it simmer over low heat for 3 minutes, then turn off the heat. | | 4 | In a small bowl, beat together the egg yolks and 1/4 of the wine until thick. Slowly add the egg yolk mixture into the sauce. Stir until the sauce has thickened. Add the cottage cheese and mix well. | | 5 | Preheat oven to 400 F. (or 180 C) | | 6 | Roll the ham to a *pipe*, then arrange on top of the spinach. Arrange mushrooms on the side, then top the ham with the cream sauce. | | 7 | Transfer to the oven, then let it bake for about 3-4 minutes. |
