Ham Rolls Florentine

Ingredients:
4 largeslices of cooked ham
3/4 lbsfrozen spinach - thawed
1 canbutton mushrooms, drained
2 tbspbutter
1 cupcream
4 tbspwhite wine or port wine
2 xegg yolks
xsalt, pepper and ground nutmeg
1/4 cupcottage cheese
2 xgarlic cloves, chopped
2 tbspcooking oil
1/2 tspcornstarch
Procedures:
1Thaw the spinach in room temperature - you may use the microwave oven.
2Heat cooking oil in a frying pan over high heat. Saute the chopped garlic, then add the spinach. Saute for about 3 minutes, then transfer to a baking dish.
3For the sauce, put the cream, 3/4 of the white wine and cornstarch in a small sauce pan. Mix and bring to a boil. Season with salt, pepper and nutmeg. Let it simmer over low heat for 3 minutes, then turn off the heat.
4In a small bowl, beat together the egg yolks and 1/4 of the wine until thick. Slowly add the egg yolk mixture into the sauce. Stir until the sauce has thickened. Add the cottage cheese and mix well.
5Preheat oven to 400 F. (or 180 C)
6Roll the ham to a *pipe*, then arrange on top of the spinach. Arrange mushrooms on the side, then top the ham with the cream sauce.
7Transfer to the oven, then let it bake for about 3-4 minutes.
