Grilled Veal Knuckle with Sage

Ingredients:
8 xround slices of veal knuckle
1/4 cupfresh sage - roughly chopped
1/3 cupolive oil
1/2 cupcognac
xsalt, pepper, and paprika
Procedures:
1In a large bowl, mix together the chopped sage, olive oil, and cognac.
2Toss and marinate veal knuckle slices in the sage mixture for 2 hours.
3Season with salt, pepper and paprika, then cook over a hot charcoal grill for about 10-12 minutes each side, until cooked.
4Serve hot off the grill.
