Ingredients:

| tbsp | butter | | 1
| x | large onion, chopped | | 2
| lbs | pumpkin, cubed | | 3 1/2
| cups | chicken stock | | 1/2
| tsp | grated nutmeg | | 1/2
| cup | evaporated milk | | x | salt and pepper for seasoning | | 1
| tsp | chopped parsley for garnish |

Procedures:
| 1 | Melt butter in a large saucepan. Add onion and cook for 3-4 minutes, until golden. | | 2 | Add pumpkin cubes and cook for 2 minutes more, stirring constantly. | | 3 | Add stock and nutmeg. Bring to a boil, then simmer until pumpkin is tender. | | 4 | Put soup in blender (in batches). Puree until smooth, then return to a clean pan and stir in evaporated milk. | | 5 | Season with salt and pepper and more nutmeg, if desired. | | 6 | Reheat without boiling; top with chopped parsley if desired. |
