Creamy Pumpkin Soup

Ingredients:
2 tbspbutter
1 xlarge onion, chopped
2 lbspumpkin, cubed
3 1/2 cupschicken stock
1/2 tspgrated nutmeg
1/2 cupevaporated milk
xsalt and pepper for seasoning
1 tspchopped parsley for garnish
Procedures:
1Melt butter in a large saucepan. Add onion and cook for 3-4 minutes, until golden.
2Add pumpkin cubes and cook for 2 minutes more, stirring constantly.
3Add stock and nutmeg. Bring to a boil, then simmer until pumpkin is tender.
4Put soup in blender (in batches). Puree until smooth, then return to a clean pan and stir in evaporated milk.
5Season with salt and pepper and more nutmeg, if desired.
6Reheat without boiling; top with chopped parsley if desired.
