Baked Clams with Garlic and Cheese

Ingredients:
4 dozenclams
8 xgarlic cloves, finely chopped
1/4 lbsbutter, thawed at room temperature
1/4 cupchopped parsley
1/2 cupwhite wine
3 tspbread crumbs
xsalt and pepper
1 cupgrated cheese
Procedures:
1Wash the clams in cold water. Place in a pot, then pour in the white wine. Cover and bring quickly to a boil. Cook for 2 - 3 minutes.
2Remove clams and drain - reserve liquid. Detach the empty half of the clam shell.
3Preheat oven at 400 F (190 C).
4Melt butter in a small saucepan, then saute the chopped garlic for 2 minutes, until garlic has slightly browned. Add 2 tablespoons of the clam - wine liquid and chopped parsley, then season with salt and pepper.
5Arrange the clams in a baking tray. Sprinkle some breadcrumbs on each clam, the add a dollop of the garlic butter mixture.
6Top with some grated cheese, then bake in the oven for about 4-7 minutes, until the cheese is bubbly.
7Remove from oven, then arrange in serving plates. Garnish with parsley and serve with white wine.
