Russian Buckwheat Pancakes

Ingredients:
2 tspfresh yeast
xpinch of caster sugar
1 cupmilk - lukewarm
1 cupflour
3 xegg yolks
1 1/4 cupbuckwheat flour
3 xegg whites
xpinch of salt
xbutter for pan frying
Procedures:
1In a small bowl, mix together yeast, sugar, and milk. Leave in a warm place to become frothy.
2Place flour in a large bowl. Make a well in the center, then beat in the yeast - milk mixture. Leave in a warm place for about 40 minutes.
3Mix in the buckwheat flour and egg yolks, then leave in a warm place again for 30 minutes.
4Whisk the egg whites together with the salt. Fold into the buckwheat batter.
5Melt butter in non-stick frying pan over medium heat. Spoon in a tablespoon of the batter at a time to make small pancakes, cooking 2-3 minutes on each side until golden.
