Ingredients:

| tbsp | grated parmesan cheese | | 1/4
| tsp | ground black pepper | | 2
| tbsp | flour | | 1
| x | egg, beaten | | x | oil for deep frying | | 4
| tbsp | sliced almonds, crushed | | 1 1/4
| lbs | potatoes |

Procedures:
| 1 | Cook the potatoes (skin on) in lightly salted boiling water for about 20 minutes. | | 2 | Remove potatoes, then peel. Cut roughly into large cubes, then puree in a food processor. | | 3 | Beat in the egg yolks, grated cheese, and black pepper. Leave to cool for about 45 minutes. | | 4 | Roll the potato mixture into balls (1.5 - 2 inch diameter) then roll in flour. Dip in egg, then coat with the crushed almonds. | | 5 | Deep fry in hot oil for about 2-4 minutes, until golden brown. |
