Potato Croquettes with Almonds

Ingredients:
2 xegg yolks
4 tbspgrated parmesan cheese
1/4 tspground black pepper
2 tbspflour
1 xegg, beaten
xoil for deep frying
4 tbspsliced almonds, crushed
1 1/4 lbspotatoes
Procedures:
1Cook the potatoes (skin on) in lightly salted boiling water for about 20 minutes.
2Remove potatoes, then peel. Cut roughly into large cubes, then puree in a food processor.
3Beat in the egg yolks, grated cheese, and black pepper. Leave to cool for about 45 minutes.
4Roll the potato mixture into balls (1.5 - 2 inch diameter) then roll in flour. Dip in egg, then coat with the crushed almonds.
5Deep fry in hot oil for about 2-4 minutes, until golden brown.
